Mesa Restaurant Inspiration
Mesa is one of our favorite casual dining Filipino restaurants. Known for dishes like Grilled Seafood, Stuffed Squid, Garlic Chicken, and Scallops, it always delivers on flavor. Among these, my personal favorite is Mesa’s Mixed Vegetables, which I decided to recreate at home.
Flavor Inspiration for the Sauce
Mesa’s version has a slightly salty and sweet sauce, topped with peanuts that give it a nutty aroma and crunch. While I can’t pinpoint the exact ingredients they use, I created my own version called Mixed Vegetable Honey Peanut Glaze.
Ingredients for Mixed Vegetable Honey Peanut Glaze
Here’s what I used in my homemade version (I wanted asparagus too, but it wasn’t available nearby):

Cooking Procedure
Preparing the Vegetables

Boil the vegetables gently — do not overcook.

Rinse with cold water to stop the cooking process and retain crunch.
Making the Sauce

Heat about 4 tablespoons of olive oil in a pan.

Add butter after 3 minutes.

Toss in peanuts and sauté for another 3 minutes.

Add soy sauce and honey.

Stir until the sauce thickens into a glossy glaze.
Finally, pour the honey peanut glaze over the vegetables and toss lightly before serving.

This Mixed Vegetable Honey Peanut Glaze is a simple yet flavorful dish — sweet, savory, and nutty all at once. It pairs perfectly with steamed rice and can be a great side dish or even a main for light meals. Inspired by Mesa, but personalized to taste
